Kitchen lactometer is a glass float with a special alloy ballast at bottom part and a measuring scale at the top. Milk areometer makes use of Archimedes principle to measure the density of milk.
This aerometer type is designed to measure density of milk (low, regular or extra fat, whole, sterilized, baked, fortified), whey and buttermilk.
Useful information:
Average density of milk is 1027 kg/cub.m, of whey – 1023 kg/cub.m.
For cottage cheese preparation use milk with a minimum density of 1028 kg/cub.m.
Proteins, salts and sugar in milk increase its density. Fats, on the contrary, decrease it.
